Ica is situated on the north of Lima. The climate over there is very dry and the city is surrounded by a desert. However, the river passing through the city and the irrigation system allow to grow plants. They plant mangos, papayas, bananas, ananases, and above all - grapevine. Ica is the capital of pisco, the nacional alcohol of Peru. Pisco is a destilled wine, which tastes a bit like rakija from Croatia.
I know something about producing a wine, because I worked in the French vineyard few times. Here, in Ica it looks totally different. At first, the plants are very high, and the barrics are earthen, not wooden.
The process of producing a wine is also different. At first they pick up the grapes during the day and pack them into a kind of wine-cellar.
Then, at night, they tread the grapes using they legs. The scrashed grapes go to the other whole where they are pressed by other machine. Then the wine ferment and is put into the barrics.
Actually I don’t know everything about the process because it was really difficult to understand spanish speaking farmer, but what I know for sure is that there are many sorts of pisco. The basic one is Pisco Puro, anoter is Acholado, which is made of different kinds of grapes mixed together. The most sophisticated one is Mosto Verde which is made of wine that was fermenting only for a 6 ddays instead of 12.

Tutaj w winnicy jest jak w buszu. Drzewa wysokie, winogrona na wysokości 2 metrów. W Bordeaux zupełnie inaczej to wygląda. Ale tutaj im chodzi tylko o pisco, czyli o wino destylowane %-)
